COURSE CONTENT:
Food and Hospitality B focuses on relaxed, casual dining and creative food experiences like you would find in a modern café or at an event.
In this course, you will explore how to make popular brunch meals, café-style dishes, and visually appealing charcuterie and grazing boxes. You will still cover all the essentials, like food safety, technology in the kitchen, and healthy eating but with a focus on casual presentation and crowd-pleasing meals.
You will also investigate the latest trends and issues in casual dining, looking at what shapes people’s food choices today. Safety and sustainability are important, and you will develop practical skills you can use both at home and in a wide variety of workplaces.
If you enjoy friendly, everyday food experiences and want to build your skills in line with today’s café culture, this course is your perfect fit.
You can take Food and Hospitality – Food Trends on its own, or together with Stage 1 Food and Hospitality – Creative Foods for the full year. There are no prerequisites, you don’t have to do Creative Foods before you do Food Trends.
ASSESSMENT
Assessment types
1. Individual tasks – requiring an action plan (400 words), a research task (400 words) and an evaluation (400 words).
2. Group activity – involving a collaborative action plan (400 words), group practical application and an evaluation report (400 words).
3. Investigation – research project (800 words).
